Currants are a member of the Saxifragacea family, Ribes subtype. The gooseberry is harvested by whole bunches.
This fruit is a small bushberry with a translucent peel whose color will vary according to the cultivar. It can be white, pink, or red.
Its pectin content is high. Its tart and lightly scented taste is a good match for other fruits used in the confection of jellies, jams, and syrups.
